For Your Eating Pleasure

We love sweet potatoes at the Wilkins' household! They are so good for you too! Last night we made sweet potato pancakes and we thought we would share the recipe with all of you! Drew was the actual creator of this recipe. He took pieces from some other recipes online and then added a few of his own twists. They were delicious!!!

2 sweet potatoes
1 onion
3 tablespoons of olive oil
1 tablespoon of brown sugar
rosemary to taste
1 egg

Put pan to medium heat until olive oil is shimmering then add sliced onion and saute until caramelized. Add brown sugar to the onion and saute for 2 more minutes. Remove onion from the heat. Shred the 2 medium sweet potatoes and add onion mixture, rosemary, and egg to the potatoes. Mix together. In greased pan scoop out 1/2-1 cup of mixture and flatten into pancake size. Cook for several minutes until brown and crispy and do the same on the other side.


Enjoy! We paired them with scrambled eggs and homemade blueberry muffins!
